With work, school, sports and kids (especially in a blended family) life during the week is really hectic. It’s hard to rush home, help with homework and cook dinner. This recipe is easy, quick, and my family loves it!
2lbs of boneless skinless chicken breasts or thighs (cut into 1-2 in pieces
cooking spray and olive oil
Spray skillet with cooking spray and drizzle a little olive oil and heat. Cook chicken pieces until lightly browned and remove from skillet.
1/2 teaspoon minced garlic
1/4 teaspoon ginger
1/4 teaspoon red pepper flakes
1/2 cup water
1/3 cup soy sauce (I use reduced sodium soy sauce)
1/3 cup brown sugar
1/4 cup juice (I use Hi-C or Hawaiian fruit punch but apple is fine)
1 Tablespoon cider vinegar
2 Tablespoon ketchup
2-3 teaspoon cornstarch
green onions as garnish (optional)
In the same skillet, mix all sauce ingredients except the corn starch and green onions. Heat thru until dissolved. Stir in chicken and heat to boiling. Reduce heat and simmer uncovered for 15 minutes. Dissolve cornstarch in 2 Tablespoons cold water and pour into skillet and let simmer 5 more minutes stirring regularly to thicken sauce. Garnish with green onions if desired and serve over rice.
