BBQ Pork Stew
prep-time=10 minutes cook-time=30 minutes
Serves 4-6 leftovers freeze well
|1 lb smoked pork loin(leftover and
|3 tbl. Flour|
|2-3 medium potatoes-chopped||1 qt. beef broth|
|1-2 cups mixed vegetables(leftover or frozen||¼ tea. powdered mustard|
|1 medium onion-chopped||1 tbl. worchestershire sauce|
|4-5 fresh tomatoes-chopped||2 tbl. BBQ sauce|
|28 oz. can crushed tomatoes|
- Cook onion and potato in 1 tbl. of olive oil over medium heat until softened.
- Add a pinch of salt and fresh ground black pepper. Add pork to potatoes and heat through.
- Some of the mixture will stick to the bottom of the pan, but when you add the liquid to the stew scrape the bits off the bottom of the pan.
- Add the rest of the ingredients except for the mixed veggies, cover, and simmer on low for 20-30 minutes.
